Fried Halloumi cheese with Lime & Caper vinaigrette

I really love the taste of halloumi cheese, or squeaky cheese as we often refer to it, from the noise it makes when you bite into it. Sometimes, the halloumi can be really rich and buttery, but this dressing will definitely offset and cut through all of the richness of the Halloumi.


1          Halloumi cheese

2 tbs     Flour, seasoned with salt and pepper

2 tbs     Olive Oil


For the dressing

1          Lemon, zest and juice

1 tbs     White wine vinegar

1 tbs     Capers in brine, drained

1          Garlic clove, finely chopped

1 tsp     Grain mustard

2 tbs     Coriander leaves, finely chopped

2 tbs     Extra virgin olive oil

Salt and black pepper

Preparation and cooking

Unwrap the cheese and pat dry with kitchen paper. Cut into 8 slices, then dip both sides of the cheese into the seasoned flour. Add the oil to a frying pan and turn the heat up to high. When it’s really hot, place the halloumi cheese into the pan and cook for 1 minute on each side. Do not overcrowd the pan, and cook in batches if necessary. They need to be good and golden on each side, and should be removed to a serving plate when done.

Whilst the cheese is cooking (and keeping an eye on it), make the dressing by whisking all of the ingredients together in a small bowl.

Serve the cheese right away, with the dressing poured over the halloumi, and warmed pitta breads.
