Linguini alla Puttanesca

This is a really simple quick, salty and spicy pasta sauce that can be combined with your choice of pasta, and cooked meats to make the meal more substantial. Spaghetti alla puttanesca (literally “whore’s style spaghetti” in Italian!!!)

 

Ingredients

2          Garlic cloves, crushed

2          Green chillies, finely sliced

8          Anchovy fillets

400g    Tinned tomatoes, chopped

100g    Black olives, pitted

1 tbs     Capers

Olive oil

Fresh basil leaves

 

Preparation and cooking

Warm a large pan over the heat, add the olive oil, and then gently cook the anchovy fillets, chilli and garlic for a couple of minutes, until the anchovies start to disintegrate.

Turn up the heat, and add the tinned tomatoes and leave to cook for approx. 15-20 minutes. Cook 500g of fresh pasta in rapidly boiling water with a little salt, and cook as directed on the packet.   Drain the pasta, and place in a warmed serving dish.

When the sauce is ready, stir in the olives and the capers, mix well and serve over the pasta. Toss the pasta in the sauce so that it’s well coated. If adding some cooked meat (beef or chicken) heat through in the sauce for a couple of minutes before serving over the pasta.

Variations

Add more chilli, garlic, green olives, red peppers or leave out the capers as you wish.
