Hold the front page! We have figured out how to cook pizzas in the style of Pizza Express, a well known Pizza chain in the UK. The crust is crispier and has more flavour than the standard pizza dough from this recipe Fresh Pizza
2 tsp Dried yeast
1 tsp Sugar
150ml Water (warmed to between 22 to 25 deg C)
240 g Strong white flour
1 tsp Salt
For the sauce / toppings:
3 tbs Tomato puree
3 tbs Tomato ketchup
Cheddar and mozzarella cheese, grated
Your favourite toppings !
Preparation and cooking
Start by mixing the yeast, sugar and water in a bowl, and allow to stand for 10-15 minutes for the yeast to activate and a froth to form (couple of cm’s deep).
Place the first flour, salt and yeast mixture into a bread maker bowl. Set the bread maker on to the “pizza dough” option which takes around 45 minutes to make a ready proved dough. If you don’t have a bread maker, then mix all dough the ingredients in a large bowl until well combined. Turn out on to a floured surface and knead for at least 10 minutes. Return the dough to the bowl, and cover with cling film, leaving for at least ½ hour for the dough to double in size.
Turn out the dough onto a oiled (olive oil) surface and divide in to two pieces, and roll out each ball of dough into 25cm round approx. 5-7 mm thick. Adjust the size of the pizza according to your taste of base thickness. Place on a pizza baking tray and allow to prove in a warm place for at least 1 hour.
When risen and ready to cook, preheat the oven to 220°C. Mix the tomato puree and ketchup and spread thinly over the two pizza bases. Cover with grated cheese and bake in the oven for approx. 9-11 minutes.
