Braised Cabbage and Chestnuts

Cabbage on its own can be really dull, but when combined with bacon, onion and chestnuts, it really comes alive, and becomes the star of the meal. This is a favourite we have every Christmas.

 

Ingredients

1          Large green cabbage (the long pointing one!)

1          Onion

100g    Chestnuts, tinned or vacuum packed

100g    Smoked bacon, sliced into small chunks

25g      Butter

Salt and black pepper

 

Preparation and cooking

Prepare the cabbage by stripping any of the outer leaves that aren’t perfect, cut in half lengthways, then remove the root core with a tri-angular cut. Now, slice up the cabbage leaves into 1 cm slices. Steam the cabbage for about 5 minutes in a steamer, so that its nearly cooked but still retains its bite, then remove from the steamer and set to one side.

Whilst the cabbage is steaming, melt the butter in a large frying pan and fry the bacon until just beginning to brown at the edges. Next, add the onions and sliced up chestnuts and cook for a further 3-4 minutes. Add the steamed cabbage to the frying pan and generously season with salt and black pepper, and stir-fry for 1 more minute. Turn out into a serving dish and add another knob of butter.
