Smoked Mackerel Pâté

This is a really simple recipe that takes just a few minutes to make, and tastes great.

2-3      Smoked mackerel fillets, approx. 300g

1          Lime, rind and juice

200g    Cream cheese

½        Red onion, finely chopped

Few leaves of flat leaf parsley, finely chopped

Preparation and cooking

Remove the skin from the Mackerel fillets and flake the fish into a bowl, with the cheese, chopped red onion, lime zest and juice. Add some freshly ground black pepper.

Add all of the ingredients together except the parsley and mix together. Ensure the Mackerel is flaked and check for any fish bones. Don’t over-mix the pâté so that it is still coarse in texture. Chill in the fridge, and eat within a few days. Serve with warm bread such as freshly baked Sourdough, and garnished with freshly chopped parsley. Simples!

If the pâté tastes too strong, just add more cream cheese. Instead of the lime, add a good big spoonful of creamed horseradish sauce.
