Fiery Americas

There is a strong ‘Mexican’ influence in this selection of dishes, inspired by the many Mexican restaurants that turned up in the UK during the 1990’s, offering something different to many Indian or Chinese restaurants prevalent at the time. Now of course, our choice of cuisine is so much wider, better, and of a higher standard.

One of my favourite flavours in the world comes from this region, which is the Cajun spice. Its fiery and aromatic spice coating that works so well with pretty much any meat or fish you can barbeque.   It also brings back many memories of eating fabulous food in Florida including some Cajun Alligator tails!
