Pork Chops in Maple BBQ Sauce

This recipe looks complex, but will only take 5 minutes to make, and gives a wonderful result with a delicious sticky sauce.

Ingredients

4          Pork chops, approx. 150g each

1 tbs     Olive oil

2 tsp     Lemon juice

1          Onion, peeled and finely chopped

Salt and black pepper

 

For the sauce

2 tbs     Maple syrup

75ml    Red wine

4 tbs     Japanese soy sauce

2 tbs     Red wine vinegar

1 tbs     Tomato puree

1 tsp     Ground ginger

1 tsp     English mustard

2          Garlic cloves, crushed

1½ tsp  Tabasco sauce

To finish

55ml    Red wine

Preparation and cooking

Start by mixing the onion, olive oil and lemon juice in a baking tray, and placing the chops in the tray and rubbing with the mixture. Season with a little salt and black pepper. Pre-heat the oven to 200°C, and then place the pork chops on a high shelf and cook for 25 minutes.

Meanwhile, combine all the sauce ingredients in a bowl and whisk together. Then, when the 25 minutes cooking is up, remove the tray from the oven and pour off any excess fat. Now pour the sauce over the pork chops, and return to the oven for a further 25 minutes of cooking. Occasionally baste the chops with the sauce. After that, remove the tray from the oven, and place it over a medium direct heat. Pour in the red wine, and let it bubble for 1-2 minutes. Serve immediately.
